I was flipping through my green folder of recipes the other day and remembered my first failed attempt (they were way too soupy) at these childhood favorite of mine. So I gathered the ingredients and bought a new candy thermometer to give it a second go to try and master the art of Chocolate Boiled Cookies.
Ingredients: 2 Cups Sugar
1/2 Cup Butter
1/2 Cup Cocoa
1/2 Cup Milk
2 1/2 Cups Quick Cooking Oats
1 tsp. Vanilla
In a large pan, melt the Butter
Then add the Milk
Sugar
And Cocoa mixing thoroughly
Bring to a rapid boil then reduce the heat
Continue boiling for 3-4 minutes, or until softball stage (234F)
Remove from the heat and stir in the Oats
Then Vanilla, mix well
Drop the Batter by spoonfuls onto wax paper and let stand until hardened
Super sweet and Chocolaty, these Cookies have always been a favorite of mine. The only problem I have when making them is that they set pretty quickly so be fast when spooning them out or the final ones will be a little dry and wont spread as much. Also store them in a airtight container or they don't taste nearly as good the next day.
