Homemade Carnival Delight

Have you ever been sitting around and all of a sudden your hit with a hankering for Funnel Cakes, but theres not a Fair to be found for miles around? If you answered yes then you and I have something in common my friend, the love of fried doughy foods. However, if your cravings are anything like mine, they just wont be satisfied with a simple substitution, so what can you do? Ill tell you what, you can make these simple delicious home-made versions right in your own kitchen with minimal effort. Just follow the steps below and you'll be well on your way to slaying your hunger.

Ingredients: 3 Eggs
2 Cups Milk
1/4 Cup Sugar
3 2/3 Cup All-Purpose Flour
1/2 tsp. Baking Powder
1 Tbls. Vanilla
Powdered Sugar (optional)

In a large bowl, combine HALF of the Flour

Baking Powder

And Salt together, then set aside

In another container, cream together the Eggs

Vanilla Extract

Milk

And Sugar until well incorporated

Add the Liquid mixture into the Flour mix

And stir until blended, the batter will be thin and runny

Add the remaining Flour in to the mixture a little at a time until the batter thickens

It should be slightly runny, but thick enough to pour (like pancake batter)

Pour Oil into a pan until halfway full and heat until 375 F (190 C)

Fill a sandwich bag with the Batter

Then cut a hole large enough for the Batter to pour through in one corner

After the Oil is heated, start pouring the Batter into the pan

Rotating in circles around the pan

Until the bottom is covered

Then let it fry until brown on the bottom

Use tongs to flip it

And continue frying until golden brown on both sides

Once it is done cooking, hold the cake above the pan to let any excess Oil drip off

Then set it on a plate covered with paper towels to soak up any remaining Oil

Let it cool for just a little while then dust with Powdered Sugar and serve.

This is a simple recipe that I find tastes better than any Carnival/Fair Funnel Cakes that I've ever had. Ive made it several times before and it continues to get better each time. Hopefully you'll enjoy it as much as I have.
